These are my old Edible Plants notes, It's a summary.. and most know that for awhile there many of these made it on my regular diet list.

First Note: As with any of these plants, if you want to learn how to cook or prepare these plants find someone experience in it to guide you and teach you in their presence. I took these notes from Environmental Studies, under Mr. Bendlin. So I was taught the ones below from his Environmental Studies highschool class. So do not just run out and cook and pick any of listed below, unless you are 100% sure you know what you are doing, as these notes lack details of when to harvest, and how to cook, and prepare... and also other drug and herbal interactions.

Sg = Salad Green
Cg = Cooked Green
T = dried for tea
JJW = Jelly, Jam, Whine
Sp = dried for spices


Name of the Plants/Edible part, if any/Plant prepration and use.

Ground Cherry, spiney bell like fruit/(Yellow fruit) fruit/Peek husk Sg, Cg

Queen Ann's Lace, white flat topped flowers with a dark blossom in the center. (wild carrot)/Root,taproot/Sg, Cg.

Black Mulberry Tree/Fruit/Sg,JJW
Choke Cherry (do not eat the seeds, or eat before ripe) Tree/Fruit/Sg,JJW
Gray Dogwood/DO NOT EAT/ Berries colored white, do not take a bite.
Stinging Nettle/Leaves/Cg, boil for an hour. DO NOT TOUCH BOTTO OF LEAVES IT IS AN ITCHWEED.
Black Berry/Fruit/Sg,Cg
Staghorn Sumac, Fruit, T (not to be confused with the shrub variety, which is poisonous.)
Amaranth (pigweed)/Leaves/Sg,Cg
Spring Green/Flowers and seeds/T and roasted seeds.
Goosefoot/Leaves/Sg,Gg
Red Clover/Flowers and Leaves/T, Sg,Cg
Bergamont (mint family)/Leaves/T
Purple Nightshade DO NOT EAT DEADLY/POISONOUS!
Burdock, Leaves (no bigger than hand)/Cg,size of your hand
Catmint/Catnip (catarita nepeta, not to be confused with another plant named catmint that is deadly)./Leaves/T, Sp
(Skunkweed same plant as above/ Flowers and Seeds/T.
Black Walnut/Nut fruit/Dried,Sg
Elderberry/Fruit/Sg,JJW
Wild Grapes/Fruit and tendrils, Sg, JJW
Leaves/cooked greens
Oxalis All parts above ground, Sg
All parts below ground Cg
Rosehips Fruit DO NOT CHEW THE SEEDS/ Sg, Only seed skin.

Rule #1 If you do not know what the plant is do not touch it.
Rule #2 if you are not 100% sure which is which do not eat.
Rule #3 If you are not sure how to properly prepare the item, do not eat it.

ps. I am not a clinical certifed herbalist, or teacher, if this has peaked your interested in wild edibles, please find a certified experienced teacher to learn how to properly classify, eat, and prepare these plants... if interested.
